Two breweries in one: To Øl, BRUS

To Øl Beers are a classic for craft beer enthusiasts - no wonder they can put in all their experience to push boundaries in different directions food- and drinkwise.

When we were greeted by Liam in the BRUS/ To Øl location in Copenhagen, we knew already that things are going to be more than about hop forward IPAs.

Let's start with the food options: The famous fermented fries are a must try on a first visit. The kimchi is not for the spice haters out there. And during our visit there was fish with peas on the menu. Speaking of the menu: This changes through the seasons and is sometimes also influenced by Christian - putting a fabulous Wiener Schnitzel on the plate as the Austrian guy in the team.

For draft beers it is all about freshness

To Øl taps are connected right to the (fermenting) tanks - giving you nothing but the freshest of brews. "From tank to throat" they might call it also.

BRUS as their side project is only consumed on site in the brewpub - so another good reason to go to the source!

An exciting story we were told is about their newest brewing facility (far) outside Copenhagen: It is called To Øl City and is located inside a former ketchup factory in a small town named Svinninge.

Together with the head brewer Tom we were so grateful to try a selection of fresh brews - including their version of the "All together" collab - founded by Other Half.

This and all other beers were just outstanding - and we do not say that because of polite reasons.

Also, the "45day Pilsner" was probably the best bottom-fermented beer we had tried so far.

To top it all off To Øl is starting their journey into craft cocktails. Under the brand "Mikropolis" they offer high quality spirits ready mixed from the tank right at the bar.

The "Old Fashioned" is a great choice we think.

On the way home, browse through the bottle and merch shop next door. Maybe you are also lucky enough to grab a 5l party keg of your choice before it is gone - they are very, very popular!

Bonus tip

Combine the visit with a table reservation at BÆST restaurant just opposite of BRUS / To Øl. After a couple of beers at To Øl, this high class Pizza at a serious spot will kill all your cravings. On the side you will be treated with the best mozzarella you will experience - promised.

It comes from their own farm of cows and is not imported. The development of this craft did go a very long way of trials until perfection and satisfaction of the chefs.

And BÆST got awarded as 4th best spot among the best 50 pizza places of 2020 in Europe by Fine Dining Lovers.
